This finely stone-ground matcha from Uji, Kyoto Prefecture, is perfect for both Usucha (thin tea) and Koicha (thick tea) in Japanese tea ceremonies.
**We try to avoid using the term "ceremonial" as it doesn't exist here in Japan.
Origin of the Name
“Jo no Mai” (Noh Dance Prelude) is a masterpiece of Shoen Uemura, a renowned Japanese painter famous for her portraits of beautiful women. She was born in Kyoto, the second daughter of a tea leaf merchant who owned the “Chikiriya” shop.
In September 2012, our matcha received trademark registration from the Japan Patent Office (Business application number: 2012-042362).
Finely Stone-Ground Matcha
Tencha, the tea leaves used to make matcha, are covered for 30 days, then steamed and dried without kneading. The final step involves carefully grinding the tencha leaves with a stone mill, producing high-quality matcha with a pleasant, mellow taste and easy foaming. This meticulous process takes about one hour to grind just 40g of matcha.
