Gyokuro is a tea grown under the shade. Tea plantations are covered for about 20 days to block direct sunlight and then to prevent the transformation of theanine (amino acid which delivers the taste of umami) into catechin (polyphenol which triggers astringency). It results in a tea with a lot of flavor and rich in umami.
