The tea is made with first flush tea leaves from the Yamashiro Province in Kyoto Prefecture, mostly grown by the Yamashiro Tea Producers’ Union. Kyoto-made fukamushi-cha is rare, since it is produced in small scale.
About the Yamashiro Tea Producers’ Union
The Yamashiro Tea Producers’ Union keeps growing plants according to the traditional Yamashiro methods. The union was granted the GAP (Good Agricultural Practices) certification which guarantees that food safety practices are being used on farms. The Yamashiro Tea Producers’ Union grown tea is also certified JAS, the organic standard in force in Japan.
The union started making Kyoto fukamushi-cha three years after its creation. At that time, Kyoto-made fukamushi-cha was rare and really difficult to make. Each member of the union uses the same fertilizers and pesticides to unify the cultivation methods. Even though, sunlight exposure allows for variations in tea leaves harvested. Hence, it was decided to blend the tea leaves grown by each tea producers of the union to obtain a uniform product.
The Yamashiro Tea Producers’ Union was granted the Asahi Agricultural Award six years after its creation in recognition of its high level of tea making techniques and of cultivation management inherited from the traditional tea cultivation methods. The union was also granted six times the Minister of Agriculture, Forestry and Fisheries Award at the Uji Tea Fair for the excellent quality of its tea.
About Fukamushi-cha
Deep-steamed green tea is steamed twice or three times longer than ordinary green tea. The deep steaming method helps enhance the sweet flavor of the tea and suppress astringency.
70-80% of the nutrients contained in the tea leaves do not dissolve in hot water but remain in the tea leaves. The water loads with dietary fibers, beta-carotene, vitamin E, and minerals (copper, zinc, manganese) while steeping the tea. The dark bright green color of the tea is caused by the tiny particles of the tea leaves floating on the surface of the water.
Fukamushi-cha is often drunk in the Shizuoka area and in the Kakegawa area, also known as Japan's longevity cities. Accordingly, fukamushi-cha producers care a lot about the quality of the tea leaves, because they want it to be drunken by many people so that they can enjoy a long and healthy life.
