In the sweltering heat of the summer, the concept of Japanese cold brewed tea is just as refreshing as its flavour. It has been rapidly trending due to its refreshing and healthy alternative to sugary drinks, and a great beverage to have when you're battling 40°C outside.

Other than that, cold brewed green tea can also boost your immune system due to the presence of 4 types of catechins found in tea:

Catechins

Green tea contains the highest amount of EGCG, accounting for about half of the total catechin content. The order of content is EGCG > EGC > ECG > EC.

EGCG, which has been the focus of much attention, has been found to have an inhibitory effect on inflammation and allergies. Meanwhile, EGC has been found to activate macrophages and boost immunity.

Macrophages not only ingest and digest foreign substances and bacteria that enter the body, but also memorise this information so that they can respond immediately the next time they enter the body -- this leads to an increase in immunity.

Catechins tend to dissolve easily at high temperatures, but when extracted with cold water, ECGC is suppressed and more EGC is extracted. The amount of EGCG and EGC is important, and if they are equal, it is difficult to see the effect, and it is desirable for the amount of EGC to be at least twice the amount of EGCG.

Brewing at 20°C for 1 hour or at 4°C for 1 hour increases the amount of EGC and makes it easier for the immune system to work.

What to prepare:
👉1 litre of cold water, 15g tea leaves (5 teaspoons), (tea bag)
 
Preparation:

1. Put the tea leaves in a pot of cold water.
If your machine has a tea strainer, you can use whole leaves.
You can also put the tea leaves in a tea bag so that they are easier to discard later.

2. Pour in water and chill in the refrigerator for 2 to 6 hours.
By slowly extracting the tea, the tea leaves open up slowly, resulting in delicious tea.

Make it before you go to bed and it will be ready the next morning!
 
*For hygienic reasons, please drink the cold brewed tea you make within a day if possible.
*Water-infused tea leaves can be infused for two or three times.
