Kankōbai (寒紅梅), meaning ''Crimson Plum in the Cold,'' is a poetic motif in Japanese culture, often used in seasonal poetry and tea naming. It refers to the first red plum blossoms that emerge while winter is still firmly present. Blooming against the cold, these flowers symbolise quiet resilience, restrained beauty, and the subtle promise of renewal. Kankōbai reflects this imagery in tea form: a cup that feels warming and reassuring, yet refined and composed, with richness held in careful balance.

A Fukamushi Sencha of Exceptional Depth

This tea is crafted as a Fukamushi Sencha, a style defined by an extended steaming process - typically two to three times longer than standard sencha. During deep steaming, the cell structure of the leaves breaks down more thoroughly, allowing a greater concentration of amino acids, soluble fibers, and fine leaf particles to disperse into the infusion.

The result is a liquor that is visually denser and more opaque, with a fuller body and pronounced umami. Sweetness is amplified, while bitterness and sharp astringency are naturally softened. On the palate, the tea feels smooth and rounded, almost creamy, creating a sense of depth that is both comforting and quietly luxurious.

First Harvest, Thoughtfully Blended

Kankōbai is made exclusively from ichibancha, the first harvest of the year, traditionally regarded as the most prized picking in Japan. After the winter dormancy, tea plants concentrate amino acids such as L-theanine in their leaves, resulting in a mellow, umami-forward character and a naturally smooth taste.

The tea is also a deliberate blend of leaves from Shizuoka and Kagoshima, two of Japan's most respected tea-growing regions. Shizuoka contributes structure, freshness, and clarity. Kagoshima, with its warmer climates and volcanic soils, adds softness, depth, and gentle sweetness. Together, these elements create a well-rounded profile that feels cohesive rather than complex for complexity's sake.

In the cup, Kankōbai offers an unusually deep and satisfying expression of Sencha. The umami is rich and layered, recalling the intensity of a fine Gyokuro, yet the tea remains approachable and easy to drink. The texture is thick and velvety, coating the palate without heaviness.

There is no aggressive bitterness or drying astringency. Instead, the finish is clean and gently dry, lingering softly with a subtle sweetness that encourages slow, mindful sipping. Each infusion reveals consistency rather than sharp contrast, making the tea deeply calming and reliable.

Brewing and Enjoyment

Kankōbai is forgiving and versatile in brewing, a hallmark of well-made Fukamushi Sencha. It performs beautifully at slightly lower temperatures, where its sweetness and umami come forward most clearly, but it can also tolerate casual preparation without losing balance. Multiple infusions remain expressive, with body and aroma holding steady across cups.

It pairs especially well with delicate wagashi, or lightly sweet pastries, where its umami and smoothness provide contrast without overpowering.
